Once again Trader Joe’s for the win. They have so many Paleo-friendly options and this cauliflower crust is no exemption. I slathered ours with marinara sauce, pepperoni, crumbled goat cheese, and fresh basil. If dairy-free is your thing, replace the goat cheese with caramelized onions or remove it altogether. The basil is what actually pulls this pizza together, that and the cauliflower crust. The trick to making this plant-based pizza taste like ‘pizza’ is baking the cauliflower crust at a high temp before you add any of the toppings. Once the outside edges start to darken, take it out and add the marinara sauce and pepperoni. Then stick the pizza back in the oven and broil for an additional 3-4 minutes. Afterwards add the remaining toppings, cut into slices, and serve immediately. Pairs well with hot sauce, avocado slices, chili flakes, and/or ranch dressing.
