I cannot begin to describe to you how delicious my caesar salad is. The dressing is creamy, tangy, and perfectly balanced – a rainbow of flavors for your tastebuds. In the summer, I make this at least once a week because it’s so easy and soooooooo good. In the winter instead of grilling the meat I usually buy a rotisserie chicken from our local grocery store (Fresh Thyme or Lunds make Paleo compliant birds) and it tastes just as delicious. And bonus I can then freeze the carcass and use it later on to make my own chicken stock. Win/win.
Originally this recipe wasn’t Paleo (think lots of parmesan cheese and soybean oil mayonnaise) but I PROMISE you won’t even miss the dairy and low-grade food oil. It is every bit as decadent and mouth-watering without the additives. Try it and see for yourself!
