Though this recipe is not paleo, it IS gluten and dairy free! I love finding recipes that allow you to still enjoy the foods you love with ingredients that is much better for your gut and health! I used an Olive Garden copycat chicken gnocchi recipe and changed the ingredients and method to fit a gluten and dairy free lifestyle. I thoroughly enjoyed this recipe and hope you do too!

Ingredients
- 3 TBSP vegan butter (I used Miyokos European vegan butter)
- 1 TBSP olive oil
- 1/2 cup onion diced
- 1/2 cup celery diced
- 2 garlic cloves
- 1/4 cup gluten free flour (I used Bob's Red Mill gluten free flour)
- 2 cups dairy free milk (I used oat milk)
- 1 32 oz carton of chicken broth
- 1 TBSP fresh thyme
- 1 cup shredded carrots
- 1 cup fresh spinach leaves
- 1 1/2 cup diced cooked chicken breast or rotisserie chicken
- 1 13 oz cauliflower gnocchi (Trader Joes sells this in their frozen section)
- salt and pepper to taste
Instructions
- In a large pot add vegan butter and olive oil. Over medium heat sauté the onion, celery and garlic until tender.
- Add the flour, stirring as you slowly add it in, to create a roux. Slowly add the dairy free milk and chicken broth. Stir until it starts to thicken (you can add a little gluten free cornstarch if you would like to make it thicker).
- Add the thyme, carrots, spinach, chicken and gnocchi. (If you think your carrots will need a bit to cook, wait to add the gnocchi until 5-7 minutes before you are ready to serve as it will get soggy if cooked for too long).
- Add salt and pepper to taste. We added a bit more salt and pepper and it turned out perfect to our liking, keep taste testing to find your right amount! Serve.
