Vegan Mashed Potatoes

Ingredients
- 5 Russet potatoes, peeled and chopped
- 1/2 cup Oatmilk
- 3 TBSP Vegan butter (I used Miyokos)
- Salt & pepper
Instructions
- Peel and chop the potatoes. Place in a pot of water and heat to boil. Boil for about 20 minutes or until potatoes are easily cut through with a knife.
- Drain and place potatoes in a bowl with the oatmilk, vegan butter, salt and pepper.
- Mash together and stir until you reach the consistency you like for mashed potatoes.
